“Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination. They are usually about 1-3 inches long and come in a rainbow of colors, which has made them popular in recent years as garnishes with chefs.”
Our partner, Refresh Appalachia, s growing these tasty greens at West Edge (the old Corbin Factory) in Westmoreland. Refresh is teaching young people how to farm while giving them a chance to earn a degree from MountWest Community College.
The Wayne crew is rockin’ a fun variety of microgreens these days at our urban farm at the West Edge Factory. They’ll soon be on the shelf at The Wild Ramp.
